Dinner

Bean soup

Cook it the day before you want it. It is better on the second day and this is not folklore: the starch keeps thickening and the smoke works through the beans overnight.

Ingredients

Making for

6 servings

6× custom
  • Dried white beans2.25 cup
  • Smoked ribs or stew beef2 lb
  • Fant for grah, 60g packet2 each

Quantities scale linearly with servings. Round to the nearest practical amount when shopping.

Steps

  1. 1

    Soak the beans overnight

Put 2.25 cups of dried white beans in a bowl, cover with cold water by a good two inches, and leave them overnight. They roughly double. Skipping the soak does not ruin the dish but it adds an hour of simmering and the skins tend to split.

  2. 2

Drain, and start again with clean water

Tip the soaking water away and rinse the beans. That water holds the sugars that make beans hard on a stomach, and throwing it out is the single easiest thing you can do about it.

  3. 3

Beans and smoked meat into the pot

Beans and 2 lb of smoked ribs or stew beef into a heavy pot. Cover with cold water by about two inches. Bring it up to a boil, then drop it to a bare simmer with the lid tilted.

  4. 4

    Simmer until the beans give

An hour and a half to two hours. Old beans take longer than fresh ones and no clock can tell you which you bought, so test rather than time it: a bean should squash against the roof of your mouth with no bite left in the middle. Top up with hot water if the level drops below the beans.

  5. 5

Stir in two packets of Fant

Mix the two packets into a cup of cold water first until there are no lumps, then stir that into the pot. Adding the powder straight to hot liquid gives you lumps you will not get out. Simmer another 10 minutes and it thickens as it goes.

  6. 6

Taste before you reach for salt

The smoked meat and the Fant have both salted this already. Taste it first. If the meat was on the bone, pull it off now and put the meat back in the pot in rough pieces.

  7. 7

    Let it sit

Off the heat for 15 minutes before serving, or better, into the fridge overnight. Tomorrow it will be thicker and it will taste more of smoke than it does right now.

Coach's notes

  • The gluten on this card comes from the Fant: its published ingredients list wheat flour. Without the packets the dish has no top-9 allergen in it.
  • It is a salty dish by design. Between smoked meat and two seasoning packets, there is no need to add salt at the table, and a young athlete does not need it.
  • Beans and smoked meat in one bowl is 37g of protein with 11g of fibre, which is why this is an evening meal rather than something to eat before running.
  • Smoked ribs give a better broth, stew beef gives more meat per pound. Both work, and the shopping list says either.
  • Serve it with something pickled: pickles, pickled salad, whatever is in the jar. The sharpness cuts the fat and the salt, and it is how the dish is eaten at home rather than a garnish added for the photograph, which is why it is here and not in the ingredients.
