- Whole-grain tortillas1 each
- Cheddar slices1 each
Quantities scale linearly with servings. Round to the nearest practical amount when shopping.

Dry pan, medium, no oil
A whole-grain tortilla into a dry pan on medium. Oil makes it greasy before the cheese melts, and the dry pan crisps it properly.

Cheese on one half only, fold
One slice of cheddar over half, fold the other half on top. Cheese to the edges leaks out and burns onto the pan.

Two minutes a side, then rest before cutting
Press it flat, two minutes each side. One minute on the board before cutting, or the molten cheese runs straight out.

Coach's notes
- About 15 g of protein for five minutes and one pan.
- This is deliberately the simplest thing on the site. Not every snack needs a technique.
- Add leftover chicken and it becomes the quesadilla lunch recipe.
- Eat it before practice rather than in the car. Melted cheese in a bag is nobody's friend.
