Peppers and onion first, hard and fast
Two bell peppers sliced, into a very hot pan with 1 tbsp oil for 5 minutes, barely stirred, until they have black edges. Those charred edges are the entire flavour of fajitas and gentle cooking gives you none of them.

Peppers out, chicken in
1.5 lb of chicken breast in strips, seasoned with 2 tsp of taco seasoning, into the same pan. Six to eight minutes, turned once. Cooking them together steams both.

Build it as a bar, not a plate
Rice in the bowls, then chicken and peppers, then everything else on the table in separate bowls: cheese, lettuce, tomato, lime. A child who assembles their own dinner eats considerably more of it than one handed a finished plate.
