Dark toast, and let it cool for a minute
Two slices of whole-grain bread toasted well, then left to cool briefly. Cottage cheese on scorching toast goes runny and slides off.

Half a cup of cottage cheese per slice, pressed down
Spoon it on and press it flat with the back of the spoon so it grips the toast rather than sitting in a pile.

Salt, pepper, tomato
Sliced tomato on top, then salt and pepper. Cottage cheese is bland and slightly sour on its own, and salt is what turns it into a savoury breakfast rather than a health food.
Coach's notes
- About 25 g of protein, which is more than two eggs, with no pan to wash.
- Low-fat rather than fat-free. Fat-free is noticeably sourer and needs more salt to cover.
- Works with a sliced peach instead of tomato if he prefers sweet, and the protein is identical.
